  • 1 headgreen cabbage, cut into 2-inch pieces

  • 1 can (400g)white beans, drained and rinsed

  • ¼ teaspoonred pepper flakes
  • 3 tablespoonstahini
  • 3 tablespoonsfresh lemon juice
  • 2 tablespoonswarm water
  • 1lemon, cut into wedges
  • 2 tablespoonsfresh parsley, chopped
  • 2 tablespoonspumpkin seeds

How to make it

Step 1

In a small bowl, whisk together tahini, lemon juice, warm water, and half the minced garlic until smooth. Season with salt and pepper. Set lemon tahini sauce aside.

Step 2

Heat olive oil in a large skillet over medium-high heat. Add remaining garlic and sauté for 30 seconds until fragrant.

Add cabbage pieces to the skillet and cook without stirring for 3-4 minutes until edges begin to blister and char.

Stir the cabbage and cook for another 4-5 minutes, stirring occasionally, until tender with charred edges.

Add white beans to the skillet and toss to combine. Cook for 2-3 minutes until heated through.
