Crispy Blistered Cabbage with White Beans and Lemon Butter

Ingredients
- 500ggreen cabbage, cut into thick wedges
- 3tablespoons olive oil
- 400gcanned white beans, drained and rinsed
- 4tablespoons butter
- 3cloves garlic, minced
- 2lemons, zest and juice
- 1teaspoon sea salt
- 0.5teaspoon black pepper
- 0.25teaspoon red pepper flakes
- 2tablespoons fresh parsley, chopped
How to make it
Heat olive oil in a large skillet over medium-high heat until shimmering.
Add cabbage wedges and cook for 8-10 minutes, turning occasionally, until deeply browned and blistered on all sides.
Push cabbage to the side of the skillet and add butter and minced garlic to the center.
Cook garlic for 1 minute until fragrant, then stir to combine with the cabbage.
Add white beans, lemon zest, lemon juice, salt, pepper, and red pepper flakes.
Toss everything together and cook for 3-4 minutes until beans are heated through.
Taste and adjust seasoning as needed. Transfer to serving plates and garnish with fresh parsley.
