Crispy Rice Paper Rolls with Smoked Salmon and Cream Cheese
Rice paper sheets are pan-fried until gloriously crispy and filled with classic Nordic smoked salmon, cream cheese, dill, and a squeeze of lemon. An elegant snack that feels impossibly fancy.
Ingredients
- 8 sheetsrice paper wrappers
- 200gsmoked salmon, thinly sliced
- 100gcream cheese, softened
- 1cucumber, julienned
- 1avocado, thinly sliced
- 2 tbspfresh dill, chopped
- 2 tbspfresh mint, chopped
- 1 tbsplemon juice
- 500mlvegetable oil for frying
- salt and pepper to tasteseasoning
How to make it
Heat vegetable oil in a deep pan to 180°C (350°F)
Dip each rice paper wrapper in warm water for 3 seconds until pliable
Lay wrapper on a flat surface and spread 12g cream cheese in the center
Layer smoked salmon, cucumber, avocado, dill and mint on top of cream cheese
Fold in the sides of the wrapper, then roll tightly from bottom to top
Seal the edge with a small dab of water
Carefully place each roll into hot oil seam-side down
Fry for 2-3 minutes until golden and crispy, turning halfway through
Remove with a slotted spoon and drain on paper towels
Season with salt, pepper and lemon juice while warm, then serve immediately
