Air Fryer Crispy Bacon and Egg Breakfast Rolls
Golden, flaky bread rolls stuffed with air-fryer-crisped bacon and a creamy scrambled egg filling that make weekday mornings feel like a weekend treat.
Ingredients
- 8slices of bacon
- 4large eggs
- 4flour tortillas (8 inch)
- 1 cupshredded cheddar cheese
- 1/2 cupdiced bell peppers
- 1/4 cupdiced onions
- 2 tbspbutter
- salt and pepperto taste
How to make it
Preheat air fryer to 380°F (193°C) for 3 minutes.
Cook bacon in air fryer for 8-10 minutes until crispy. Remove and chop into bite-sized pieces.
In a bowl, whisk together eggs, salt, and pepper.
Heat butter in a skillet over medium heat and scramble eggs with bell peppers and onions until just set, about 4 minutes. Remove from heat.
Lay out each tortilla and divide scrambled eggs, bacon, and cheddar cheese evenly among them.
Roll each tortilla tightly, tucking in the sides as you roll to create a sealed burrito.
Place rolls seam-side down in air fryer basket in a single layer.
Cook at 380°F for 5-7 minutes until golden brown and crispy.
Remove from air fryer and let cool for 1 minute before serving.
