Ingredients

  • 1 headgreen cabbage
  • 3 tbspolive oil
  • 1 can (400g)white beans, drained and rinsed
  • 2 clovesgarlic, minced
  • 120mlvegetable broth
  • 2 tbspfresh lemon juice
  • 1/2 tspsalt
  • 1/4 tspblack pepper
  • 1/4 cupfresh mixed herbs (parsley, dill, chives), chopped
  • 1/2 tspgarlic powder

How to make it

Step 1

Cut cabbage into 4 thick steaks (approximately 2cm) by slicing vertically through the core. Brush both sides with 2 tbsp olive oil and season with salt and pepper.

Heat a large skillet over medium-high heat. Working in batches if needed, place cabbage steaks flat and cook for 5-6 minutes per side until golden brown and blistered.

Step 3

Transfer cooked cabbage steaks to a serving plate and keep warm.

In the same skillet, add remaining 1 tbsp olive oil and sauté minced garlic for 1 minute until fragrant.

Step 5

Add white beans and vegetable broth. Simmer for 5 minutes, then mash roughly with a fork, leaving some texture. Stir in lemon juice, salt, and pepper.

Step 6

In a small bowl, combine fresh mixed herbs, 1 tbsp olive oil, and garlic powder to create herb oil.

Step 7

Divide white bean mash among serving plates, top with cabbage steaks, and drizzle generously with herb oil. Serve immediately.
