Ceviche Clásico
Just 6 ingredients and no heat needed: fresh fish cured in lime juice with red onion, chilli, and cilantro, the way Lima street stalls have served it for generations.
Ingredients
- 500gfresh white fish fillet (sea bass or halibut)
- 200mlfresh lime juice
- 100mlfresh lemon juice
- 1red onion, thinly sliced
- 2red chili peppers, finely chopped
- 1cilantro bunch, chopped
- 2tomatoes, diced
- 1avocado, sliced
- 2 clovesgarlic, minced
- 1 tspsea salt
- ½ tspblack pepper
- 3 tbspextra virgin olive oil
How to make it
Cut the fish fillet into 1.5cm cubes and place in a glass bowl
Pour lime juice and lemon juice over the fish, ensuring it is completely covered
Add minced garlic, salt, and black pepper to the fish
Cover and refrigerate for 10-15 minutes until fish becomes opaque
While fish marinates, prepare red onion, chili peppers, tomatoes, and cilantro
Remove fish from refrigerator and gently fold in tomatoes, red onion, cilantro, and chili peppers
Drizzle with olive oil and gently toss to combine
Divide ceviche into serving bowls and top with avocado slices
Serve immediately and enjoy cold
