Ingredients

  • 500gfresh collard greens, chopped
  • 3garlic cloves, minced
  • 1medium onion, diced
  • 3 tablespoonsEthiopian spiced butter (niter kibbeh)
  • 1 teaspoonginger, minced
  • 1/2 teaspoonberbere spice
  • 1/4 teaspoonsalt
  • 1/4 teaspoonblack pepper
  • 1/4 cupwater

How to make it

Step 1

Melt the niter kibbeh in a large skillet over medium heat

Step 2

Add diced onion and sauté for 2 minutes until softened

Step 3

Stir in minced garlic and ginger, cook for 1 minute until fragrant

Step 4

Add berbere spice, salt, and black pepper, mix well

Step 5

Add chopped collard greens and stir to coat with the spiced butter

Step 6

Pour in water and cover the skillet

Step 7

Simmer for 12-15 minutes, stirring occasionally, until greens are tender

Step 8

Taste and adjust seasonings as needed, then serve hot
