Ingredients

  • 2 cupsmixed salad greens (romaine, arugula)
  • 2medium tomatoes, diced
  • 1cucumber, diced
  • 1/2 cupred bell pepper, diced
  • 1/4 cupfresh parsley, chopped
  • 1/4 cupfresh mint, chopped
  • 1/4 cupradishes, sliced
  • 1/4 cupgreen onions, sliced
  • 2 cupspita bread, cut into triangles
  • 3 tablespoonsolive oil
  • 2 tablespoonslemon juice
  • 1 tablespoonpomegranate molasses
  • 1 clovegarlic, minced
  • 1/2 teaspoonsalt
  • 1/4 teaspoonblack pepper

How to make it

Step 1

Brush pita bread triangles with 1 tablespoon olive oil and bake at 375°F for 5-7 minutes until golden and crispy, stirring halfway through. Set aside to cool.

Step 2

In a large salad bowl, combine mixed greens, tomatoes, cucumber, bell pepper, radishes, green onions, parsley, and mint.

Step 3

In a small bowl, whisk together remaining 2 tablespoons olive oil, lemon juice, pomegranate molasses, minced garlic, salt, and pepper to create the dressing.

Step 4

Pour dressing over the salad and toss gently to combine all vegetables.

Step 5

Top with crispy pita chips immediately before serving and toss lightly.
