Halloumi and Roasted Pepper Quesadilla
Golden halloumi and sweet roasted peppers melted inside a crispy tortilla. Salty, satisfying and done in 15 minutes flat.
Ingredients
- 250ghalloumi cheese
- 2large flour tortillas
- 1red bell pepper, roasted and sliced
- 1yellow bell pepper, roasted and sliced
- 100gbaby spinach
- 1/2red onion, thinly sliced
- 2 tbspolive oil
- 1 tspsmoked paprika
- 50gcheddar cheese, grated
- to tastesalt and black pepper
- 2 tbspsour cream
How to make it
Slice the halloumi cheese into 5mm thick slices
Heat 1 tbsp of olive oil in a large skillet over medium-high heat
Pan-fry the halloumi slices for 2-3 minutes per side until golden brown, then set aside
In the same skillet, sauté the red onion for 2 minutes until softened
Add the spinach and cook for 1 minute until wilted, then season with salt and pepper
Lay one tortilla flat and spread half with sour cream
Layer the cooked spinach mixture, roasted peppers, fried halloumi, and cheddar cheese on the tortilla
Fold the tortilla in half and press gently
Repeat with the second tortilla and remaining ingredients
Heat the remaining olive oil in the skillet over medium heat
Cook each quesadilla for 3-4 minutes per side until golden and crispy
Remove from heat and let cool for 1 minute before serving
