Ingredients

  • 300gboneless skinless chicken breast
  • 250gpasta (gluten-free option available)
  • 200gcottage cheese
  • 2 clovesgarlic, minced
  • 100gfresh spinach
  • 50gparmesan cheese, grated
  • 2 tablespoonsolive oil
  • 1 teaspoonItalian seasoning
  • 0.5 teaspoonsalt
  • 0.25 teaspoonblack pepper
  • 120mllow-sodium chicken broth

How to make it

Step 1

Bring a large pot of salted water to a boil and cook pasta according to package directions. Drain and set aside.

Step 2

While pasta cooks, cut chicken breast into bite-sized cubes and season with salt, pepper, and Italian seasoning.

Step 3

Heat olive oil in a large skillet over medium-high heat and cook chicken until golden and cooked through, approximately 8-10 minutes. Remove and set aside.
