High-Protein Chicken and Cottage Cheese Pasta Bowl

Ingredients
- 300gboneless skinless chicken breast
- 250gpasta (gluten-free option available)
- 200gcottage cheese
- 2 clovesgarlic, minced
- 100gfresh spinach
- 50gparmesan cheese, grated
- 2 tablespoonsolive oil
- 1 teaspoonItalian seasoning
- 0.5 teaspoonsalt
- 0.25 teaspoonblack pepper
- 120mllow-sodium chicken broth
How to make it
Bring a large pot of salted water to a boil and cook pasta according to package directions. Drain and set aside.
While pasta cooks, cut chicken breast into bite-sized cubes and season with salt, pepper, and Italian seasoning.
Heat olive oil in a large skillet over medium-high heat and cook chicken until golden and cooked through, approximately 8-10 minutes. Remove and set aside.
In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
Add fresh spinach to the skillet and cook until wilted, about 2 minutes.
Return cooked chicken to the skillet and stir in cottage cheese and chicken broth, mixing until combined.
Add cooked pasta to the skillet and toss all ingredients together for 2-3 minutes until heated through.
Divide into bowls and top with grated parmesan cheese before serving.
