Nicoise Salad
The classic French composed salad consists of tuna, green beans, boiled eggs, olives, tomatoes and potatoes dressed in a sharp Dijon vinaigrette. Elegant, protein packed and endlessly satisfying.
Ingredients
- 200gcanned tuna in olive oil, drained
- 4large eggs
- 300gbaby potatoes
- 200ggreen beans
- 200gcherry tomatoes
- 100gKalamata olives
- 1small red onion
- 150gmixed salad greens
- 60mlextra virgin olive oil
- 30mlred wine vinegar
- 1clove garlic, minced
- 5mlDijon mustard
- 2.5mlsea salt
- 1.25mlblack pepper
How to make it
Boil the eggs in salted water for 10 minutes until hard-boiled, then cool in ice water and peel
Boil baby potatoes until tender, approximately 12 minutes, then halve them
Trim green beans and blanch in boiling salted water for 4 minutes, then drain and cool
Halve cherry tomatoes and thinly slice the red onion
Whisk together olive oil, red wine vinegar, minced garlic, Dijon mustard, salt and pepper in a bowl
Arrange mixed salad greens on a large platter as the base
Arrange potatoes, green beans, tomatoes, tuna, eggs and olives in sections over the greens
Scatter red onion over the salad and drizzle with the vinaigrette before serving
