Spring Pea and Mint Soup
Vibrant green pea soup blended with fresh mint and a swirl of cream. Bright, fresh and ready in 20 minutes: the taste of spring in a bowl.
Ingredients
- 400gfresh peas (or frozen)
- 1 mediumonion
- 2 clovesgarlic
- 750mlvegetable stock
- 200mlheavy cream
- 30gfresh mint leaves
- 2 tbspextra virgin olive oil
- 1 tspsea salt
- 0.5 tspblack pepper
- 2 tbspGreek yogurt (optional garnish)
How to make it
Heat olive oil in a large pot over medium heat. Dice the onion and mince the garlic, then sauté for 3 minutes until softened.
Add the peas to the pot and stir for 2 minutes to combine with the onion mixture.
Pour in the vegetable stock and bring to a boil. Reduce heat and simmer for 8 minutes until peas are tender.
Add the fresh mint leaves and remove from heat. Let cool for 1 minute.
Using an immersion blender, blend until smooth. Alternatively, transfer to a blender and pulse until desired consistency is reached.
Stir in the heavy cream and season with salt and pepper to taste.
Reheat gently over low heat for 2 minutes if needed. Do not boil after adding cream.
Ladle into bowls and garnish with a dollop of Greek yogurt and a few fresh mint leaves if desired.
