Ingredients

  • 800gboneless chicken thighs, cut into 2-inch cubes
  • 3 tablespoonsgochujang paste
  • 3 tablespoonsunsalted butter, softened
  • 2 tablespoonshoney
  • 2 clovesgarlic, minced
  • 1 tablespoonrice vinegar
  • 1 tablespoonsoy sauce
  • 1 teaspoonsesame oil
  • 1/2 teaspoonred pepper flakes
  • 1 tablespoonneutral oil
  • 2 tablespoonssesame seeds
  • 2green onions, sliced
  • 8wooden or metal skewers
  • salt and black pepperto taste

How to make it

Step 1

Soak wooden skewers in water for 15 minutes if using. Thread chicken cubes onto skewers, leaving small gaps between pieces. Season with salt and pepper.

Step 2

In a small bowl, whisk together gochujang, softened butter, honey, minced garlic, rice vinegar, soy sauce, sesame oil, and red pepper flakes until smooth.

Step 3

Heat neutral oil in a large skillet over medium-high heat. Once hot, carefully place skewers in the pan and sear for 3-4 minutes per side until chicken develops golden color.

Step 4

Reduce heat to medium. Brush the gochujang butter mixture generously over both sides of the chicken skewers.

Step 5

Continue cooking for 4-5 minutes, occasionally turning and basting with the sweet spicy glaze until chicken is cooked through and internal temperature reaches 165°F.

Step 6

Transfer skewers to a serving plate. Drizzle any remaining glaze from the pan over the chicken.

Step 7

Garnish with sesame seeds and sliced green onions. Serve immediately while hot.
