Ingredients

  • 300gchorizo sausage, sliced
  • 2 cans (800g)white beans, drained and rinsed
  • 1 largeonion, diced
  • 4 clovesgarlic, minced
  • 2red bell peppers, diced
  • 1 litervegetable broth
  • 2 tablespoonsolive oil
  • 1 teaspoonsmoked paprika
  • 1 teaspoonchili powder
  • 0.5 teaspooncayenne pepper
  • 1 teaspooncumin
  • 2bay leaves
  • salt and black pepperto taste
  • fresh cilantrofor garnish

How to make it

Step 1

Heat olive oil in a large pot over medium-high heat. Add chorizo slices and cook for 3-4 minutes until browned and fat is rendered. Remove with a slotted spoon and set aside.

Step 2

In the same pot, add diced onion and sauté for 3 minutes until softened. Add minced garlic and cook for 1 minute until fragrant.

Step 3

Stir in diced red bell peppers and cook for 2 minutes, allowing flavors to combine.

Step 4

Add smoked paprika, chili powder, cayenne pepper, and cumin. Stir constantly for 1 minute to bloom the spices.

Step 5

Pour in vegetable broth and add bay leaves. Return chorizo to the pot and bring to a boil.

Step 6

Add drained white beans and reduce heat to medium. Simmer uncovered for 15 minutes, stirring occasionally.

Step 7

Taste and adjust seasonings with salt and black pepper as needed. Simmer for an additional 5 minutes.

Step 8

Remove bay leaves and serve hot, garnished with fresh cilantro.
