Tarka Aloo
A classic Indian dry potato dish spiced with mustard seeds, turmeric, and chili. Just 7 ingredients, one pan, and 20 minutes for a side that steals the whole table.
Ingredients
- 700gpotatoes, cubed
- 2 tbspvegetable oil
- 1 tspcumin seeds
- 1 tspmustard seeds
- 8-10curry leaves
- 2dried red chilies
- 1 tspturmeric powder
- 1 tspchili powder
- 1 tspcumin powder
- 1/2 tspsalt
- 200mlwater
- 2 tbspfresh coriander, chopped
How to make it
Heat oil in a large pan over medium-high heat
Add cumin seeds and mustard seeds, let them crackle for 30 seconds
Add curry leaves and dried red chilies, stir for 15 seconds
Add the cubed potatoes and stir well to coat with oil
Add turmeric powder, chili powder, cumin powder and salt, mix thoroughly
Add water and bring to a boil
Reduce heat to medium, cover and cook for 12-15 minutes until potatoes are tender
Remove lid and cook until any remaining liquid evaporates
Garnish with fresh coriander and serve hot
